Italian Marinated and Grilled Vegetables

Ingredients:
· Butternut squash, (or squash of choice) peeled and sliced
· Zucchini, sliced ¼ inch thick lengthwise
· Mushrooms, stem removed
· Onions (red or yellow), cut into ½ inch rings
· Peppers of choice, quartered and seeds removed
· Japanese eggplant, sliced ¼ inch thick

Marinade
· 2-3 Tablespoons ITALY BLEND
· 2 Tablespoon olive oil
· Salt and pepper

Mix the marinade well and add the prepared vegetables.
Marinate vegetables for up to an hour.
Grill, and serve with you favorite accompaniments.

Italian Marinated Prawns

Ingredients:
(Per one pound of prawns)
· Prawns, peeled and de-veined
· Lemon zest, finely sliced (optional)

Marinade
· 2-3 Tablespoons ITALY BLEND
· 2 Tablespoon olive oil
· Zest of one lemon, finely chopped (optional)
· Salt and pepper

Mix the marinade well and add the prepared prawns and lemon zest.
Marinate prawns for up to an hour.
Grill, broil, or sauté, and serve with you favorite accompaniments.
Note: If grilling prawns on wooden skewers make sure to soak wooden skewers in water beforehand (approximately 20 minutes) and skewer the prawns so they are in same direction.

Italian Marinated Steak
Yields 2 10-12 oz servings

Ingredients:
· 2 x 12 oz New York Steaks, Filet Mignon, or cut of choice

Marinade
· 2-3 Tablespoons ITALY BLEND
· 2 Tablespoon olive oil
· Salt and pepper

Mix the marinade well and rub into the steaks.
Marinate meat for up to a day.
Grill, broil, or dice into cubes and sauté.
Serve with you favorite accompaniments.

Italian Marinated Fish
Yields 2 6-7 oz servings

Ingredients:
· 12-14 oz fish of choice (filet or steak cut)

Marinade
· 2-3 Tablespoons ITALY BLEND
· 1 Tablespoon olive oil
· Salt and pepper

Mix the marinade well and rub into the fish.
Marinate fish for up to a day.
Grill, broil, or dice into cubes and sauté.
Serve with you favorite accompaniments.

Italian Marinated Roast Chicken
Yields 4 servings

Ingredients:
· 1 whole free-range chicken
Optional for stuffing:
· 2 stems rosemary
· 1 lemon, quartered
· 1 orange, quartered
· Salt and pepper

Marinade
· 2-3 Tablespoons ITALY BLEND
· 3 Tablespoon olive oil
· Salt and pepper

Mix the marinade well and rub onto the chicken.
Marinate chicken for up to a day. Place salt and pepper into chicken cavity before placing stuffing with citrus and rosemary.
Roast chicken and serve with you favorite accompaniments.

Italian Marinated Tofu
Yields 4 4 oz servings

Ingredients:
· 16 oz tofu, firm and organic, sliced tofu into ¼ inch slabs

Marinade
· 2-3 Tablespoons ITALY BLEND
· 2 Tablespoon olive oil
· ¼ cup orange juice or agave nectar
· Salt and pepper

Mix the marinade well and rub onto the sliced tofu.
Marinate tofu for up to a day.
Grill, broil, or dice into cubes and sauté.
Serve with you favorite accompaniments.
